Grilled Chicken with Rosemary and Bacon

Ingredients 
4 teaspoons garlic powder
4 skinless, boneless chicken breast halves
salt and pepper to taste
4 sprigs fresh rosemary
4 thick slices of bacon 
Directions 
1. Preheat an outdoor grill to medium-high heat, and lightly oil the grate.
2. Sprinkle 1 teaspoon garlic powder on each chicken breast and season with salt and pepper. Lay one rosemary sprig on each chicken breast. Wrap bacon around the chicken to hold the rosemary on. Secure bacon with a toothpick or an additional thick rosemary stem.
3. Cook chicken breasts until no longer pink in the center and the juices run clear, about 8 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Stay near the grill to combat any flare-ups from the bacon. Remove the toothpicks before serving.

Recipe: Leek-and-Asparagus Crispy Rice

Ingredients

2 tablespoons unsalted butter
3 tablespoons extra-virgin olive oil
2 cups chopped leeks, white parts only (from 2 large), washed
thoroughly
Kosher salt and freshly ground pepper
8 ounces asparagus, trimmed and cut into 2-inch pieces
3 cups cooked white rice
1 teaspoon grated lemon zest, plus 1 tablespoon fresh juice
1 cup blanched fresh or thawed frozen peas
1/3 cup grated Parmigiano-Reggiano, plus more for serving
1/2 cup chopped fresh parsley and dill, plus more for serving
Fried eggs, for serving (optional)


Directions

  • Heat butter and 2 tablespoons oil in a large nonstick skillet over medium-high. Add leeks, season with salt and pepper, and cook, stirring often, until translucent, 3 to 4 minutes. Stir in asparagus and 1/2 cup water. Reduce heat to low, cover, and cook until asparagus is bright green and just tender, 3 to 4 minutes. Uncover, increase heat to high, and cook until most of liquid has evaporated, about 1 minute. Transfer to a bowl.
  • Return skillet to high heat; swirl in 1 tablespoon oil. Spread rice in a single layer; cook, undisturbed, until crisp in places, about 4 minutes. Stir in leek mixture, lemon zest and juice, peas, cheese, and herbs. Season with salt and pepper. Serve with more cheese and herbs, topped with a fried egg.

Recipe: Pasta Primavera w/Peas, Asparagus and Kale

Ingredients

Kosher salt
8 ounces penne
8 ounces snap peas, trimmed and halved crosswise
1 bunch thin asparagus, trimmed and cut into 1 1/2-inch pieces
1 small bunch kale (preferably Tuscan kale), stems removed and leaves roughly chopped
1/3 cup extra-virgin olive oil, plus more for drizzling

1 large bunch fresh chives, chopped
Grated zest of 1 lemon, plus 1 tablespoon lemon juice
Freshly ground pepper
1 tablespoon chopped fresh tarragon
1/4 cup coarsely grated pecorino romano or parmesan cheese

Directions

Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs; add the peas, asparagus and kale to the pot during the last 3 minutes of cooking and stir occasionally. Reserve 1/2 cup cooking water, then drain the pasta and vegetables.
Meanwhile, combine the olive oil, all but 2 tablespoons chives, the lemon zest and juice, 1 teaspoon salt and a few grinds of pepper in a blender. Add 3 tablespoons cold water and pulse until smooth, scraping down the inside of the blender. Transfer to a large bowl. Stir in the tarragon and drizzle with olive oil.

Add the pasta and vegetables to the chive puree along with 1/4 cup of the reserved cooking water and half of the cheese; season with salt and pepper. Toss well to coat, adding more cooking water to loosen, if necessary. Serve topped with the remaining cheese and chives.

Lemon Sugar Cookies Recipe with Video by Jenn Armknecht

Craving something sweet and zesty? You’ve come to the right place! This past December, during all the holiday festivities, Jenn Armknecht, REALTOR with Licata Group EXP hosted a Cookie Exchange Party, baking over 600+ cookies!!! These lemon sugar cookies were such a hit, she was asked for the recipe multiple times and we’d like to share it with you!!

Ingredients:
2 sticks unsalted butter
1 1/2 cups granulated sugar
6 tbsp lemon zest
4 tbsp fresh lemon juice
1 large egg
3 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/4 cup sugar, for rolling cookies

  1. In a mixing bowl, beat butter, sugar, and lemon zest with an electric mixer for 1-2 minutes.
  2. Add in the lemon juice and egg. Beat again to combine.
  3. Add in the flour, gradually, as well as the baking soda, salt, and mix by hand with a spatula until combined.
  4. Cover the bowl with plastic wrap and refrigerate for 30- 60 minutes
  5. Remove the dough from the fridge. Pre-heat over to 350*F. Place 1/4 cup sugar in a bowl for rolling the cookies.
  6. Scoop cookie dough and roll to form balls, rolling each ball into the sugar.
  7. Place the cookies 2 inches apart on a lined baking sheet. Bake for 11 – 13 minutes or until the edges have a faint golden color.
  8. Allow the cookies to cool on the baking sheet for 5 minutes. Move to a cooling rack to cool completely.

Recipe: Chickpea Curry

Ingredients

1 medium serrano pepper, cut into thirds
4 large cloves garlic
1 2-inch piece fresh ginger, peeled and coarsely chopped
1 medium yellow onion, chopped (1-inch)
6 tablespoons canola oil or grapeseed oil
2 teaspoons ground coriander
2 teaspoons ground cumin
½ teaspoon ground turmeric
2 ¼ cups no-salt-added canned diced tomatoes with their juice
¾ teaspoon kosher salt
2 15-ounce cans chickpeas, rinsed
2 teaspoons garam masala
Fresh cilantro for garnish

Directions

Step 1: Pulse serrano, garlic and ginger in a food processor until minced. Scrape down the sides and pulse again. Add onion; pulse until finely chopped, but not watery.
Step 2: Heat oil in a large saucepan over medium-high heat. Add the onion mixture and cook, stirring occasionally, until softened, 3 to 5 minutes. Add coriander, cumin and turmeric and cook, stirring, for 2 minutes.

Step 3: Pulse tomatoes in the food processor until finely chopped. Add to the pan along with salt. Reduce heat to maintain a simmer and cook, stirring occasionally, for 4 minutes. Add chickpeas and garam masala, reduce heat to a gentle simmer, cover and cook, stirring occasionally, for 5 minutes more. Serve topped with cilantro, if desired.

butternut squash and chorizo hash

Recipe: Butternut Squash and Chorizo Hash

Ingredients

1 Tbsp. (or more) extra-virgin olive oil
8 oz. fresh chorizo, casings removed
1 lb. butternut squash (about ½ of a medium squash), peeled, cut into ½” pieces (about 4 cups)
1 medium onion, coarsely chopped
Kosher salt
Lime wedges and cilantro leaves with tender stems (for serving)

Directions

Heat oil in a large heavy skillet (preferably cast iron) over medium-high. Cook chorizo, breaking up into small pieces with a wooden spoon, until browned and cooked through, about 5 minutes. Transfer to a bowl with a slotted spoon; reserve skillet with fat.
Add butternut squash and onion to reserved skillet and cook over medium-high, adding more oil if needed and stirring occasionally, until golden brown and tender, 10–15 minutes. Stir in chorizo and season with salt. Squeeze a lime wedge over and top with cilantro. Serve with additional lime wedges for squeezing over.

Summer Panzanella, the Recipe

Ingredients:

  • 1/4 c. extra-virgin olive oil, plus more for brushing
  • 2 3/4″-thick slices country bread
  • 1 medium zucchini or summer squash, halved
  • 1/2 large red onion, cut into 4 wedges
  • 1 clove garlic, minced
  • Kosher salt
  • 2 tbsp. red wine vinegar
  • 4 c. diced mixed tomatoes (such as heirloom, vine-ripened, cherry, and grape)
  • 1 c. cubed fresh mozzarella
  • 1/2 c. packed fresh basil leaves, torn into bite-size pieces
  • Balsamic glaze, for drizzling

Directions:

  • Heat grill to medium-high and oil the grates. Brush bread, zucchini, and onion all over with oil and season with salt and pepper.
    Grill bread and veggies until bread is lightly charred and toasted, 30 seconds to 1 minute per side, and zucchini and onion are lightly charred and crisp-tender, 3 minutes per side.
  • Transfer grilled bread, zucchini, and onion to a work surface. Rub garlic on both cut sides of the bread, then let everything cool slightly.
  • Cut bread into bite-size cubes, thinly slice zucchini crosswise, and chop onion.
  • In a large bowl, whisk together oil and the vinegar, then season with salt and pepper. Add bread cubes, zucchini, onion, tomatoes, mozzarella, and basil. Toss to combine and drizzle with balsamic glaze before serving.
